When you choose a particular grind for your coffee, you should have in
mind the length of time that the coffee will be in contact with the hot
water in the brewing cycle. That is why espresso coffees are ground
very fine due to the short brew time, whereas those used in a drip or
French Press brewer use much courser grounds instead because the water
stays in contact with the grounds longer when brewed by those machines.
When choosing a personal coffee grinder, remember that whatever grind
you choose, fine or more course, the more consistent the grind the
better flavor coffee will be produced. With that in mind, understand
that the most common form of coffee grinder used today is the "blade"
grinder, and although it can do an admirable job in general, the "burr"
grinder does a much better job of eliminating large variations in the
size of the coffee particles produced when the beans are ground. This
means that the coffee produced will most likely be much closer to the
flavor you desired when choosing that particular grind.
With all coffee grinders it is usually best to use the coffee
immediately after grinding because the beans release gases upon being
ground that disappear fairly rapidly. These gases often contribute to a
better and more flavorful cup of coffee, so if you wait too long before
use you are losing all of the advantage of grinding the coffee yourself.
